Have a look at iMazing that's a pretty good backup and restore for iPhones I use. It uses the built in iOS sync system so its basically a fancy wrapper on top of it but I love it as I don't want my data in iCloud (outside of my calendars and contacts). It can automate things and does not need the idevice to be connected via usb-c or llightning, just WiFi is enough. (I use it on a mac but it's available for windows too).
